From Education Consultant to Coffee Creator: Lori’s New Chapter in Anthony, Kansas

When Lori wrapped up her career as an education consultant with Orion in Clearwater, she wasn’t quite sure what her “next step” in life would look like. Retirement came earlier than expected, and instead of slowing down, Lori and her husband leaned into a dream—one part her love of chai, one part his passion for coffee roasting. The result? OnyxCreek Coffee, a new Main Street gem in Anthony, Kansas.

The Sumner County Fair in Caldwell never disappoints—and this year was no exception! With cooler-than-usual August weather, the fairgrounds were buzzing with energy, excitement, and a strong sense of community.

Fairgoers enjoyed classic traditions like 4-H students proudly showing their prize-winning animals, and rows of vibrant produce, blooming flowers, and incredible youth art on display. Friday brought big smiles and laughter during Mutton Bustin' and the Farm Olympics, where kids competed in fun, hands-on farm challenges.

What started as a 10-year-old boy’s dream has grown into a thriving family farm full of personality, hard work, and love for animals.

Driving along Highway 49 near Mayfield, Kansas, you might notice a modest front-yard sign that reads simply: 

New Commercial Kitchen Takes Root in Caldwell, Thanks to Community Collaboration

A new commercial kitchen is under construction behind the Caldwell Workspace at 110 S. Main Street, bringing fresh opportunities for food entrepreneurs in the region. Made possible by a grant through K-State 105, this kitchen is designed to meet the needs of modern food businesses with specialized appliances and equipment for large-scale food preparation. It will operate in full compliance with health and safety standards.
