We are excited to welcome Ryan Lee-AKA the Bread Barron to the Border Queen Harvest Hub! Ryan and his wife recently moved to the Perth area from Tulsa, Oklahoma, bringing with them a love of rural life, hard work—and now, some seriously delicious sourdough bread!
Ryan has worn many hats throughout his career, including aircraft mechanic, construction worker, farmer, and truck driver. But one thing has remained constant throughout his life: Ryan has always loved bread!
In fact, even as a kid, Ryan would roll bread into little “breadballs” and pop them right into his mouth. So perhaps it was only a matter of time before he became a breadmaker!
Ryan was inspired to try sourdough after seeing the beautiful bread made by another Border Queen Harvest Hub producer, Chelsea Nichols of Unity Farms. He bought his starter... and then didn't start!
Eventually, he decided to give it a try. Around the same time, Ryan had been diagnosed with diabetes and realized he needed to make some changes to his diet. When he learned that sourdough can be a great bread option for people with diabetes, he was all in.
His first loaf? Well... it was FLAT!
But when Ryan tasted it, he discovered that even though it didn't look quite right, it was delicious! He soon learned that he had over-proofed that first loaf. From there, he spent countless hours experimenting, learning, and perfecting his process.
Today, Ryan is turning out beautiful, fluffy sourdough loaves—and making approximately 30 loaves a week!
And he doesn't stop at bread. Ryan discovered that focaccia is basically over-proofed sourdough... and it turns out, that's pretty delicious too!

Ryan says his Jalapeño Cheddar is probably his most popular—and we can certainly understand why!
We are thrilled to have Ryan and his delicious sourdough creations as part of the Border Queen Harvest Hub family. His story is a great example of what we love about the Hub: local people learning, creating, and turning their skills and passions into something they can share with their community.
