Driving along Highway 49 near Mayfield, Kansas, you might notice a modest front-yard sign that reads simply: Fresh Farm Eggs. Behind that sign is an extraordinary story—one of perseverance, faith, and a deep passion for cultivating blessings from the land.
I recently stopped by to visit Barbara “Princess” Ross and her husband, Jim Ross, and quickly discovered that their farm offers far more than just eggs. Their land is alive with abundance: free-range chickens of many varieties, a thriving vegetable garden overflowing with carrots, greens, potatoes, tomatoes, beets, onions, and squash, along with honeybee hives and a young apple orchard.
Princess shared that she wasn’t always a farmer—far from it. Born and raised in Haiti, she describes herself as a “city girl” with a business degree. She and Jim met and fell in love while he was in Haiti on a mission trip. At the time, they had no plans to move to the United States. After Jim’s mom passed away, they decided to move back to take care of his aging Father.
In 2012, Princess and Jim moved to their farm to care for his father, and they began a new chapter. While Jim grew up farming (and also holds a business degree), Princess dove into this unfamiliar life with determination, learning every skill she could to nurture their land and family.
What impressed me most was how this family works as a team. Their teenage son manages the chickens and egg production, while Princess tends the garden and has become an expert canner—specializing in hearty, ready-to-eat meals in a jar. Before I left, she generously shared a jar of her homemade tomato soup. It was absolutely delicious!
Princess loves living along the highway, where neighbors and travelers alike can stop in for fresh eggs, vegetables, and a friendly chat. Her warmth and resilience are truly inspiring. Her journey is a powerful reminder of the strength found in community—and the quiet joy that comes from working the land with love.
