From Education Consultant to Coffee Creator: Lori’s New Chapter in Anthony, Kansas
When Lori wrapped up her career as an education consultant with Orion in Clearwater, she wasn’t quite sure what her “next step” in life would look like. Retirement came earlier than expected, and instead of slowing down, Lori and her husband leaned into a dream—one part her love of chai, one part his passion for coffee roasting. The result? OnyxCreek Coffee, a new Main Street gem in Anthony, Kansas.
Launched in 2023, OnyxCreek began with small-batch sales at local markets. But soon, the couple realized they needed more space to roast their five signature, Kansas-focused coffee blends. The perfect spot appeared downtown—big enough for roasting, and big enough to share.
So Lori called on friends. The idea was simple: “Would you like to bring your products into this space too?” They said yes, and OnyxCreek quickly grew into something larger than a coffee shop. Today, it also houses Gallery Mostaza, Fat Bird Food Boards, Sam Beam Art, Onyx Floral by Beth Farmer, and JCJ Noir. Lori added her own candle line and Anthony-inspired postcards and stickers designed by Neve’s Niche.
The shop was designed to be a place where people can slow down, meet a friend, or even tuck into work with a warm drink nearby. Visitors can choose from OnyxCreek’s signature coffees, chai (made with Lori’s own syrup), cold chai, teas, craft sodas, and light bites. A fan favorite? The Buffalo Roam—Lori’s spin on a dirty chai.
When my mom and I recently visited, we enjoyed chai and coffee that felt both special and comforting—proof of Lori’s care in every recipe. The space itself is as inviting as the drinks, a reflection of Lori’s vision for connection and creativity.
And she’s not done yet. Soon, OnyxCreek will roll out a cappuccino and latte line, plus an expanded pantry featuring bottled syrups and homemade granola.
For Lori, retirement wasn’t an ending—it was an opportunity to create something meaningful, blending her own talents with her husband’s passion and the creative energy of friends.
